talk masala = chaat masala In order to make your own personal: Roast in a pan one tablespoon coriander seeds and two tablespoons cumin seeds, then grind them alongside two tablespoons black colored peppercorns, one tablespoon smashed dried out red chilli peppers, one tablespoon amchoor powder, plus one tablespoon sodium. Substitutes: garam masala

garam masala = Indian sweet spice mix = sweet spruce blend records: you can purchase this either entire or ground. Durban is a well-regarded brand name. masala Notes: this is actually the catch-all Hindi term for a spice blend. Popular masalas include garam masala, talk masala, and sambar masala.
panch phoron = panch pharon = panchphoran = five spruce records: this will be a Bengali spice mix that integrates aniseed, cumin, fenugreek, mustard and nigella. Never confuse it with Chinese five spice dust, which is completely different. Substitutes: garam masala otherwise curry powder
